Energy in wholesale and production bakeries

Bakeries producing for supermarkets, foodservice, cafés or their own shop estate. Rack and tunnel ovens, a steam boiler, automated moulders and dividers, chilled or frozen despatch, and shift patterns that push production well beyond a single trading day.

Common energy challenges for wholesale and production bakeries

  • Rack and tunnel ovens holding temperature across a full production shift, not a two hour bake

  • A steam boiler that fires from before the first mix to after the last wash down

  • Blast chilling and frozen despatch storage that runs seven days a week

  • Half hourly metering, capacity charges and a demand peak that can cost more than the units themselves

Where the energy goes

Typical equipment loads across bakeries, breweries and food production, with annual kWh and cost bands from published benchmarks.

Energy saving tips for wholesale and production bakeries

  1. 1

Get your half hourly data and find your true maximum demand. Production bakeries are routinely paying for agreed capacity they never come close to using.

  2. 2

Stagger oven and boiler start ups rather than firing everything at shift change. Flattening that peak can change your capacity charge as well as your unit cost.

  3. 3

Insulate steam and condensate lines and fix steam trap failures. A failed trap on a bakery boiler can waste thousands of pounds of gas a year on its own.

  4. 4

Recover oven flue heat into boiler feedwater or the hot water system. On a rack oven line the payback is usually measured in months, not years.

  5. 5

Review your contract twelve months before it ends. At this consumption a one penny per kWh difference on electricity is worth several thousand pounds a year.
